When you think of Italian ladyfingers, three things might come to mind: first, that they're super hard and tasteless, second, that they're smallmini cakes, and three are incredibly hard to find!

I know this is a bit confusing to me as to what bikinis really are.

What are the fingers of the hand?

Ladyfingers are biscuits like in Italycookie. The bottom resembles a sponge cake.

Before baking, they are generously sprinkled with powdered sugar. During the baking process, they become light and crispy, similar to biscotti but not as dense.

Why this recipe works:

  • Minimal ingredients help bring these cookies together quickly.
  • They don't take long to bake.
  • Because cupcakes are seasonal most of the time, you can easily make them year-round.

Where can I find Ladyfingers?

If you're lucky, your local supermarket carries them. However, they may not always be there.

I find that the type of grocery stores they have most often are high-end grocery stores.

If your local supermarket stocks them, they're in the bakery section. This is usually where they sell the softer version of ladyfingers.

They will also be in the cookie aisle, but they will be super hard and crunchy cookies.

If you're not in a hurry to make your dessert, I suggest making this homemade cupcake recipe instead of buying wrapped cupcakes.

Like many people, I had a hard time finding Ladyfingers locally. Instead of buying them (because I literally couldn't find them anywhere), I decided to make them!

I had dreams of making oneTiramisu Kuchenand I just had to have Ladyfingers. Tiramisu consists of a mascarpone cream garnished with soaked ladyfingers, cream and cocoa powder.

So they were a key ingredient in my cake!

What are they dipping in for the tiramisu?

The gingerbread cookies can be soaked in a variety of things to make tiramisu. I used a blend of Marsala wine and coffee extract for mineCake.

However, you can only use Marsala or Madeira wine. Other options include strong coffee or espresso, dark rum, amaretto or kahlua!

If you want non-alcoholic tiramisu, use coffee or espresso instead of alcohol, it's still delicious!

How to store:

This ladyfinger recipe can be stored in an airtight container for up to a week. They can also be frozen, baked, and refrigerated as directed.

Once cool, place in an airtight container and freeze for up to 1 month. To thaw, simply remove from the container and place on the counter.

These cookies are so light, tender and dare I say...fancy?! I just feel like eating them LOL!

They are actually very easy to make using simple ingredients. Of course you have to be patient with them.

How to make Lady Fingers, step by step:

  1. Before preparing any recipe, especially when it comes to baking a technique-oriented dessert, have all the ingredients on hand and arrange them in advance.
  2. In the bowl of a stand mixer, add the eggs, sugar and salt. beat together.
  3. Set the bowl over a double boiler, beating constantly, making sure to scrape the sides and bottom. Continue until the internal temperature of the mixture reaches 165°F. This is a very important step, it can take 5-15 minutes for the eggs to reach the right temperature.
  4. Beat the egg mixture over high heat until light and fluffy, forming medium peaks. You'll know it's done when a portion stays for a second and then sinks back into the mix. The mixture quadruples.
  5. Add sifted flour and cornstarch until just combined, don't mix too much.
  6. Using a piping bag with a 1/2" tip, pipe cookies about 3" × 1" in size, 1" apart, onto parchment. Or you can make them as long as you like.
  7. Generously sift powdered sugar on top. Bake at 350°F degrees for 12 minutes.
  8. The cookies will turn golden brown on the bottom and light brown on top. Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

See this is really a super easy recipe, when I get the chance to make them I always choose to make them over buying them, homemade is always better!

TIPS AND TRICKS:

  • These can be frozen, please see my storage tips above.
  • Vanilla paste can be hard to find, you can substitute regular vanilla for this recipe.
  • Be sure to whisk the egg mixture constantly so it doesn't overcook.
  • Be careful not to overmix the dough in this recipe, it will dry them out, fold them gently until you don't see any dry spots.
  • If you don't have a piping tip, simply cut the tip off your bag so it can reach a thickness of 1 inch.
  • These will expand slightly as they cook, this is normal.
  • Don't worry about sprinkling more powdered sugar in the pan, it won't burn.

Ingredients

  • 3 large Owner
  • 2/3 Taxes granulated sugar
  • 1/4 teaspoon sal kosher
  • 1/2 teaspoon Vanilla Extract the vanilla extract
  • 1 Taxes all purpose flour unpackaged, easily filled with spoon
  • 2 tablespoon cornstarch
  • 1/2 Taxes powdered sugar to remove dust

instructions

  • Preheat oven to 350°F degrees. One in the bowlblenderAdd eggs, sugar and salt. beat together. in onesmall pot, add about 3 inches of water. Bring to a simmer over medium heat. Set the bowl of the food processor on top of the saucepan, making sure the bottom of the bowl doesn't touch the water to form a double boiler.

  • Constantwhiskthe egg mixture, making sure to scrape the bottom and sides constantly. Continue until the egg mixture reaches 165°F. This can take between 5 and 15 minutes. Transfer the bowl to the base of the stand mixer with the whisk attachment.

  • Add the vanilla. Beat on high for 5 minutes or until mixture has quadrupled in size and forms medium peaks. You'll know it's done when a tablespoon of the mixture holds its shape for a few seconds before melting back into the batter.

  • SieveMix the flour and cornstarch together and fold in by hand. You just want the dry ingredients to be mixed enough that you don't see any dry spots, don't mix too much.

  • Pour the batter into onepiping bagequipped with a1/2 inch tip. To make things easier, place the piping bag in a tall glass and pour the batter into the bag. lineTin traywith parchment paper, you'll probably need two baking sheets for this. Space the cookies about 1 x 3 inches and 1 inch apart. The dough will spread slightly.

  • Generously sift the powdered sugar over the cookies, don't worry, the sugar that isn't on the cookies won't burn. Bake 12 minutes. Remove from the oven and let cool slightly on the baking sheet for 2 minutes. using aturner, transfer cookies to awired shelfto cool down completely.
